Sauce
In a food processor, start by adding the chicken breast, then add the medium peeled potato, the red onion and the egg.
Season everything with the salt, a pinch of black pepper, the garlic powder, the sweet paprika, the cornstarch and blend everything very well until it turns into a smooth mixture.
Next, take a spoonful of this mixture and place it in a bowl filled with panko breadcrumbs.
Coat it by shaping it into a patty and set it aside.
Repeat this process with the entire mixture.
Next, let’s move on and prepare the sauce.
In a small bowl, add the mayonnaise, the ketchup, the mustard and the barbecue sauce.
Season everything with the black pepper, the garlic powder, the onion powder and mix everything very well until you get a smooth and creamy sauce.
In a large skillet over medium heat, add enough vegetable oil to cover the bottom and let it heat up.
When the oil is hot, add the patties we prepared and fry them until they’re nicely golden brown all over.
Serve the fritters with the sauce we prepared earlier.
