
Filling
Start by cutting the chicken breasts into 4 equal slices each.
Next, cover them with a plastic bag and using a kitchen mallet, pound them thoroughly.
Add a pinch of salt and a pinch of black pepper on top of each slice, flip them over and repeat the seasoning on the other side.
In a medium bowl, add the shredded mozzarella cheese, parsley to taste and the grated carrot.
Season with a pinch of salt and a pinch of black pepper.
Add the unsweetened plain yogurt and mix everything thoroughly until it is well combined.
Next, add one tablespoon of this filling onto one of the chicken slices we prepared and roll it up.
Repeat this process with all the chicken slices.
Transfer them to an Air Fryer basket and place the basket in the Air Fryer.
Set it to 160° C (320° F) and fry for 15 minutes.
After this time has passed, sprinkle the shredded mozzarella cheese over everything.
Place it back in the Air Fryer and fry for an additional 10 minutes or until the cheese is golden brown.
Serve.
