
Cornmeal
Start by placing the piece of beef inside a grater.
Next, add the garlic cloves skewering them with toothpicks.
Transfer it to a large skillet over medium heat with boiling water and let it cook for 10 minutes.
After this time has passed, remove the meat from the skillet and cut it into cubes.
In a large pot over medium to low heat add a drizzle of olive oil, the butter and stir until completely melted.
Add the meat and sauté everything very well.
Remove from the skillet and set aside.
In the same pot, add the onion cut into rings, the grated garlic cloves, the red bell pepper cut into strips, the sweet chili jam and sauté everything until lightly browned.
Add the beef back in, season with the salt, the black pepper, the sweet paprika, the chili flakes, the chimichurri and stir to incorporate.
Next, add the dark beer and stir to incorporate.
Cover the pot and let everything cook for 15 minutes.
In another large pot over medium to low heat, add the milk, the butter, the salt, the black pepper and stir until the butter has completely melted.
Add the cornmeal and continue stirring until it thickens slightly.
Finally, add the grated Parmesan cheese and stir again to incorporate.
Serve.
