Start by dipping the ripe apples in the melted milk chocolate.
Drain the excess chocolate and set aside until dry.
Then, cut off the top of the apples and remove their entire core.
In a large skillet over medium to low heat, add the unsalted butter and stir until completely melted.
Add the apple cores we removed, the walnuts chopped into smaller pieces, the brown sugar, the ground cinnamon and stir everything very well until fully combined.
Next, place one of the apples on top of a puff pastry disc.
Then, fill it with caramel candies until the core is completely filled.
Add a drizzle of milk, cut the pastry into strips and wrap them around the apple.
Repeat this process with all the apples and transfer them to a large baking tray.
Add the walnut mixture we prepared and brush a beaten egg over all the apples.
Place in a preheated oven at 180° C (350° F) and bake for 40 minutes.
Finally, add a scoop of ice cream on top and finish with caramel sauce to taste.
Serve.
