Eggplant Stuffed with Beef and Cheese

Start by cutting the eggplant - first, remove the ends then cut it in half.Then take one half and place 2 sticks on the sides, then cut it into strips without separating them.Turn it over, make the same cuts on the other side and do the same with the other eggplant half.Transfer it to a large bowl, add enough cold water until everything is fully covered and rinse thoroughly.Next, season with salt and black pepper to taste.Flip it, repeat the seasoning on the other side and set aside.In a large bowl, add the ground beef.Season with the salt, the black pepper, the sweet paprika, the grated onion, parsley to taste and mix everything thoroughly to evenly incorporate the seasoning.Now, fill the eggplant we cut earlier with the seasoned meat.Fill a large skillet over medium to low heat with vegetable oil and let it heat up.Add the eggplant and fry until golden brown.To finish, add any sauce of your choice.Serve.
