
Start by removing the peel from the melon, grating it using the fine side of a grater.
Then cut off the ends, separate the white part from the pulp and cut the white part into small cubes.
Next, cut the melon in half, remove the seeds and cut it into smaller pieces.
Place the white part in a large pot over medium to low heat.
Then add the sugar and stir everything very well until it caramelizes.
Remove from the heat and set aside.
Place all the melon we cut earlier into a blender and blend until it turns into juice.
Transfer it to a large pot, straining everything.
Add the cinnamon sticks, the heavy cream and the condensed milk.
Dissolve the cornstarch in the water and add it to the pot.
Turn on the heat to medium-low and stir everything very well until it slightly thickens.
Serve it together with the caramelized melon.
