
Mashed Potatoes
Start by adding the cubed beef with head of peeled garlic to a pot over medium heat with the melted unsalted butter and sauté everything until the beef is golden brown.
Add the mustard, the soy sauce, the water and stir to incorporate.
Cover the pot and let everything cook for another 10 minutes.
After this time has passed, season with a pinch of salt and a pinch of black pepper.
Dissolve the cornstarch in the water, add it to the pot and stir everything very well until it thickens slightly.
Turn off the heat, add parsley to taste and mix to incorporate.
In a medium pot, add the potatoes cut into small cubes then add enough water to cover everything.
Turn on the heat to medium and let everything cook until the potatoes soften.
Next, drain all the water from the potatoes and transfer them to a large bowl.
Add the unsalted butter and mash until it becomes a purée.
Then add the salt, a pinch of black pepper, the grated Parmesan cheese and mix everything together until combined.
Serve.
