Start by placing the beaten eggs into a medium bowl.
Season with a pinch of salt, a pinch of black pepper, spring onion to taste and mix everything very well until combined.
In a large skillet over medium to low heat add a drizzle of vegetable oil and spread it with a brush.
Add the beaten eggs and the strips of bread.
Cover the skillet and let everything fry for 3 minutes.
After this time has passed, flip the omelet, and to make the filling, add the grated mozzarella cheese, the salami cut into slices and top with another 50g of grated mozzarella cheese.
And add ketchup to taste on top, then fold the omelet in half to close it and fry for 1 more minute on each side.
Remove it from the skillet and set it aside on a plate.
In a mixer, add the mint leaves, the mayonnaise, the heavy cream, the honey, a drizzle of olive oil, the salt, the black pepper, the garlic powder, the onion powder and blend everything very well until combined.
