Start by chopping the cabbage into thin strips.
Also chop the red peppers into thin strips.
Grate the carrots and set aside.
Now transfer the cabbage, the peppers and the carrots to a bowl, mix all the ingredients very well.
Transfer this mixture to 3 canning jars and put 1 tablespoon of rock salt in each jar.
Cut the garlic into dices and add 1 tablespoon of garlic to each jar as well.
Add 100ml of water to each jar and the apple vinegar.
Put 1 slice of lemon in each jar and close with the lids.
Store in a cool place for 3 days.
Serve.

This recipe sounds very delicious although I have not made it yet. After 3 days, should the jars be refrigerated? How long will it keep (be safe to eat) if refrigerated?
