
Start by adding a drizzle of olive oil to a large skillet over medium to low heat.
Add the onion cut into small cubes, the crushed garlic cloves, the green bell pepper cut into small cubes and sauté everything very well until lightly golden brown.
Next, add the ground beef and continue sautéing until all the juices from the meat have evaporated.
Season with the salt, a pinch of black pepper, the sweet paprika, the dried thyme and stir to incorporate.
Add the tomato sauce, the slices of processed cheese and stir until combined.
Finally, add parsley to taste and mix to incorporate.
After doing that, add 2 tablespoons of this meat onto a wheat tortilla and roll it up.
Repeat this process with 6 more tortillas.
Now, grease a baking tray with unsalted butter.
Add the pancakes we prepared and brush one egg yolk over everything.
Finish with the grated mozzarella cheese.
Place in a preheated oven at 200° C (400° F) and bake until the cheese melts and turns golden brown.
Serve.
