
Start by placing the potatoes on a baking sheet with the coarse salt.
Take to a preheated oven at 180° C (350° F) and bake for 30 minutes.
In a medium bowl, add the cream cheese, the fried bacon cubes, the grated carrot, the grated cheddar cheese, the salt, the black pepper, the sweet paprika and mix everything very well until fully combined.
After the potatoes have cooled, cut them in half and scoop out the center.
In a large pot over medium to low heat, add the vegetable oil and let it heat up.
Add the potatoes we prepared and fry them until golden brown.
Remove them from the hot oil and transfer them to a large baking sheet lined with nonstick paper.
Add the filling we prepared and cover everything with the grated mozzarella cheese.
Take them to a preheated oven at 200° C (400° F) and let them bake for 15 minutes.
Serve.
