
Start by grating the frozen salmon fillet using the coarse side of a grater.
In a medium bowl, add the eggs, the milk, the salt, the black pepper and whisk everything very well.
Add the salmon we grated, parsley to taste and whisk again to incorporate.
In a large skillet over medium to low heat, add a drizzle of olive oil and let it heat up.
Add the egg mixture we prepared, cover the skillet and let it fry for 5 minutes.
After this time has passed, flip the omelet, add the grated mozzarella cheese and let it fry until the cheese melts completely.
