
Mashed Potatoes
Start by placing the beef meatballs in a large skillet over medium heat greased with olive oil and fry them until golden brown.
Then remove all the meatballs, add the ripe tomatoes cut in half, the onion cut into small cubes, the yellow bell pepper cut into small cubes and the jalapeño peppers sliced into rounds.
Season with the salt, the black pepper and the chimichurri.
Add the water and let everything cook for 10 minutes.
After this time has passed, remove the skin from the tomatoes.
Mash everything with a potato masher and stir.
Add the meatballs and stir again to incorporate.
Remove from the heat and set aside.
In a large pot, add the potatoes cut into smaller pieces, enough water to cover everything and the salt.
Turn on the heat to medium and let them cook for 15 minutes.
After this time has passed, drain all the water and transfer them to a large bowl.
Add the butter and mash everything until it turns into a puree.
Next, add the heavy cream the grated mozzarella and mix everything very well until combined.
Then, transfer the meatballs to a medium baking dish.
Add the puree we prepared and sprinkle the grated Parmesan cheese on top of everything.
Place in a preheated oven at 200° C (400° F) and bake for 10 minutes.
Serve.
