
Start by placing the smoked bacon slices on top of the puff pastry and set aside.
In a large skillet over medium to low heat add a drizzle of olive oil.
Add the onion cut into small cubes, the crushed garlic cloves and the mushrooms cut into smaller pieces.
Season with a pinch of salt, a pinch of black pepper and sauté everything very well until golden brown.
Next, season the pork tenderloin with salt and black pepper to taste and spread it well.
Then brush the unsalted butter all over the meat.
In a large skillet over medium to low heat add a drizzle of olive oil, the meat and fry it until all sides are seared.
Now, on the pastry with the bacon, add the sautéed mixture we prepared, the grated mozzarella cheese, the meat and fold the pastry to wrap everything.
Transfer it to a large baking tray and brush the egg yolks over the top.
Add sesame seeds to taste.
Take it to a preheated oven at 180° C (350° F) and bake for 35 minutes.
Serve.
